Ingredients
3 tbsp. creamy-style peanut butter
1/2 cup water
4 tbsp soy sauce
3 tbsp lemon juice
3 tbsp sugar
6 cloves garlic, minced
1 small onion, diced
1 jalapeno pepper, minced
2 tsp butter or margarine
2 tbsp peanuts chopped fine
1 tsp salt
1 tsp black pepper
Preparation
- a saucepan stir together the peanut butter and water. Add the soy sauce, lemon juice and sugar. set aside
- In a mortar and pestle or blender, grind together the garlic, onion, and jalapeno pepper until you get a thin paste. If needed, Add 1 tbsp of water. Add this paste to peanut butter mixture and bring to a boil over low heat.
- Remove from the heat and stir in butter , chopped peanuts, salt and pepper.
- Serve over Thai marinated pork.
